Coral Gables Newcomer Trust & Company

As if we needed another reason to head to Coral Gables, newcomer and highly anticipated Trust & Company has finally opened it’s doors at 2 Aragon Avenue.  The upscale-casual bar and restaurant is a breath of fresh air that was much a needed addition to the Gables food and bar scene.

The creation of restauranteur, Jerry Flynn, Trust & Co promises to be the neighborhood bar with a throwback to the early 1920’s era. It’s a place to go for lunch, dinner with friends and colleagues; it’s a bar with a little more class and sophistication. Think speakeasy / gastropub re-invented for the 21st century.

As someone who is no stranger to the Coral Gables hotspot, I was pleasantly pleased when I made my way over to Trust & Co to scope out the new kid on the block.  The staff, all extremely energetic, had a sense of pride in the restaurant and an ease about them that made you want to be their friend and hang out rather then just have them take your order and go out the door after your meal. Our server was very knowledgeable not only with the food, but the cocktails as well- we all know I love a good cocktail.

When it comes to the food, it’s not your typical bar fare.  Although not entirely locally sourced, the Chef Pablo Zitzmann does his best to try and get as much local produce that’s available from produce to bread (made by Miami’s own Zak the Baker), to  cured meats, eggs, cheese and seafood, the ingredients are hand picked to ensure the best flavor and a menu that makes you want to keep coming back for more.  To make sure you get the best tasting food, Trust & Co’s menu will change with the seasons maintaining the mission of utilizing fresh local ingredients.

Some of the items you’ll find on the menu include Bacon and Date Croquettes made with Machego cheese served on top of a Membrillo Compote- a perfect combination of savory and sweet; Irish Crispy Potatoes served with aTruffle Aoli, Irish cheddar and chives- talk about decadence; Porkbelly served with Romesco Citrus segments, pickled beets, bitter greens, and crumbled Great Hill Blue cheese- just tap out then because you’re in food heaven. These are just some of the “small plates” available.

Trust & Co. also offers a large plate selection that include pastas, flatbreads, salads, meat, chicken, and of coarse a raw bar.  My suggestion- try the Roasted Half Chicken. Served with a butternut squash puree, spiced bread crumbs, grilled radicchio, broccoli rabe, and a maple brown butter.  This is big enough for two, but not sure you’ll want to share- it’s that good!

Chef Zitzmann has a brought his extensive culinary knowledge of  Contemporary, Classic French, Japanese, Latin and New American Cuisine to create a menu that has a little something for everyone. It’s upscale fare served up in a laid-back environment.  To match the deliciously unique menu, Trust & Co has created a cocktail menu that will please the most refined cocktail connoisseur. My favorite of the night, The “Enlightened” Crush. A combination of Hanger One Buddha’s Hand Citrus Vodka, fresh-squeezed lemon juice, and Sweet-tea, basically a spiked Arnold Palmer. Be careful these can be dangerous and you can’t have just one.

Whether it’s the weekend or a weekday, Trust & Co is the perfect addition bringing a cool vibe to the streets of Coral Gables.
